Chicken with calvados..
I browned my chicken thighs in oil then put them in the oven.
Sautéed off some onion, garlic, sliced mushrooms, oregano and lovage seed, then added a good splash of calvados, but white wine or brandy would work just as well, reduced it a little..
added the chicken and a splosh of cider just because I was drinking some at the time.
then I put it back in the oven while I was cooking the potatoes, the recipe for those is here. sautéed potatoes
