That was a fantastic dough to work with, if you’ve never made bread, I’d recommend this as an introduction, it kneaded beautifully and was so soft and silky it didn’t even need rolling I just shaped it..

Crikey, where has the week gone, I started to draft this on Sunday while I was preparing the bread and have only just got round to finishing it.
I bought a whole chicken at the beginning of the week, I cut it in half, roasted half for dinner.

and cut the other half up for saute, marinaded it in jerk seasoning, cumin, all spice and spicy season all, some oil and a decent glug of Captain Morgans Gold label Jamaican rum, stuck it in the fridge over night

The next day I made

Jerk chicken and coco bread:
with rice and peas, I don’t know why it’s not rice and beans, all the recipes I found used kidney beans, not that it matters.

I made the dough in the afternoon:

2 packets yeast
1 tsp sugar
1/4 cup warm water
1 medium egg
1 cup warm milk (I used cream because I had some left over)
1 tsp salt
3.5 cups white flour (I only need 3 in all)
1/2 cup melted butter

Mix the yeast, sugar and water together.
Beat the egg and stir in to the mixture.
Stir in the milk and salt.

Stir in 2 cups of the flour.
Slowly add more flour, stop when the mixture becomes stiff.
Knead the dough until it is smooth – this should take about 10 minutes!

Transfer the dough to a clean bowl and some of the melted butter.
Roll the dough around the bowl until it is entirely coated in butter.

Cover with a damp towel for 1 hour (this will allow the mixture to rise).I left mine for 3 hours because I made it earlier.

Divide the dough in to 10 pieces and roll each piece in to a circle, about 1/2 cm thick.

Brush the dough with melted butter then fold in half.

Preheat your oven to 220 degrees.
Place folded pieces on a well greased sheet and place on the bottom rack of the oven.
Bake until golden brown (this should take around 15 minutes).

I roasted the chicken in an oven bag

and cooked the rice as I would braised rice

and served it with the bread.

it was delicious, the bread was lovely and buttery, soft and yummy, I even buttered some more it was so nice..

All in all a very nice dinner indeed.
