Mr 5 picked at it a bit, ate the bread and meat and left the rest, next time he can have another sandwich..

On Tuesday afternoon I looked at the time and thought, oh shit! it’s 20 past 5, I have half a breast of lamb for dinner tonight and it’ll need slow cooking, not knowing what I was going to do with it, I hurriedly unrolled it, sprinkled it in Lebanese spice mix and stuck it in the oven on 125ºc and hoped it would cook sufficiently to do something half decent with.

At 6pm Mr 5 said, I don’t really fancy any dinner can I have a cheese sandwich instead, so in one way it was handy because I could cook it longer, on the other, what was I going to do with it ..

I let it cook and decided to worry about it the next day and made myself a cheesy, spinach and prosciutto penne carbonara instead..

I defrosted some frozen spinach in a pan with a knob of butter and some white wine, added a mix of beaten egg and creme fraiche.

It was delicious..

The next day I looked at the lamb, cold in some tin foil and came up with

I cut it up and put it back in the oven, roasted some peppers and onions with few fennel seed, then when it had crisped up a bit put the lamb on top.

Added the beans left over from the pork Jerk that I’d froze.

Half a tin of tomatoes, some red wine, mint and coriander

and some figs I had in the fridge which were going a bit squishy.

Then I baked it

and served it on some stale bread I made into simple croutons.

Added a dollop of yogurt, some pomegranate seeds and a sprinkle of crunchy broad beans.
