I cheated and bought ready mashed potatoes, to be honest the bag I have are a bit naff, apparently it’s not been good for spuds
I made this on Thursday, I wanted to use up a few bits and pieces, I’d saved the remaining polonaise topping from the chicken earlier in the week, some prosciutto I’d bought a week ago and not used and half a cauliflower that has been sat in the fridge for about a month, it had fared rather well, I just kept looking at it and not using it, so instead of chucking it out, which I’d considered several times I made an effort, I par boiled it, coated it in seasoned flour and roasted it.
I cheated and bought ready mashed potatoes, to be honest the bag I have are a bit naff, apparently it’s not been good for spuds lately, but that’s hardly surprising, but it might explain the numerous imperfections and black patches in mine that make a rubbish mash..
Cod loin with port salut and prosciutto gratin.
Apart from the cauliflower faffing about, it was really easy to put together.
I put slices of Port Salut on top of the cod, along with the prosciutto.
Baked it until the cod was almost done
added the topping..
and cooked it until it was crunchy
It went well with the cauliflower
and I did some green beans too.
