oh and I made an apple crumble, well that’s to say, I emptied a tin of apples into a dish, opened a packet of crumble topping and poured it over.
I made these fish balls as an experiment, I’ve never made fish balls before and thought I couldn’t go wrong with smoked mackerel, I liked them, less fiddly than fish cakes to put together, so I might try something else next..
I just had a simple feta cheese and foccacia crouton salad with them..
Smoked Mackerel fish balls:
I didn’t bother to season the fish, I don’t think smoked mackerel needs it, I did season the breadcrumbs though..
I just mashed the fish and rolled it into balls
Baked them in the oven until golden brown
and it was as simple as that, I made a salad, topped with croutons
and the fish balls..
Easy peasy, a bit different and the leftovers were nice cold for lunch the next day.
