Having spent half an hour trying to figure out how to get back to classic view to blog this, I don’t like the new look beep, beep, boop version, a week has flown past and I’ve finally found the time to actually get round to doing this post, I’m surprised I still remembered how to find classic view and how I made this..
I like curry, Mr 5 prefers Mexican so I compromised and made this, I’ve called it a curry because I used the same method I’d use with curry spices, there are only so many times we can have a chilli before I’m sick of them and refuse to cook another one, he would have one every night if he could….
So this is
Chicken taco ‘curry’:
I fried off the peppers and onion in oil and then added the spice mix and cooked that for a few minutes before adding the chicken, I could just as well of mixed the chicken in the spices and done it that way, it’s another method..
I cooked that out for a bit more, on a low heat so it didn’t burn the spice
and then added a tin of taco beans
and some water along with a few diced tomatoes.
I simmered it down and just before it was ready added a dollop of yoghurt.
I served it with plain boiled rice
some salsa, squashed avocado and corn chips
it was bloody lovely actually..
