I was going through the cupboard for a tin of chopped tomatoes and found a tin of Heinz carrot and coriander soup,
I have called this Spanish pork purely because I used Spanish seasoning in the making.
We had a pork shank at the weekend, last week end I think it was, and I had a little left over, but not enough to make a full dinner, but I did have a small amount of pork fillet in the freezer, so I got that out too and mixed them together to make this, it was really nice and warming, even Mr 5 liked it..

Spanish Pork:
I fried some onion and potatoes for a few minutes to give them a little colour, added the pork and some Spanish seasoning from a jar I’d been given for Christmas.
Fried it some more, then added mushrooms, peppers and tomatoes along with the rest of the cooked meat
To that I added the soup and a little water
Then I let it simmer so the potato softened and thickened it up nicely.
and it was as simple as that..
I cut open a pitta bread, crisped it up in the oven and just poked bits into the casserole
