so I’m trying to have a little healthy spurt before I stuff my face at Christmas, sadly my cheese addiction keeps getting the better of me..
These are a couple of quick dinner I made last week, the chicken one based on the chicken poblano I made a while ago but without the cream to make it a tiny bit more healthy, I’ve decided I’ve been using far to much creme fraiche and cream in my recipes lately, so I’m trying to have a little healthy spurt before I stuff my face at Christmas, sadly my cheese addiction keeps getting the better of me..
I bought some ostrich leg steaks out of Lidl while I was in there getting more Kangaroo steak because they were so nice and apparently both ostrich and kangaroo are low in fat which is a bonus, they also taste great and make a change from the usual pork, beef and chicken that seem to be the only meat on offer anywhere else.
Ostrich pittas:
This was easy peasy, because I didn’t want to mask the meat in any way all I did was put it in the over for about 5 minutes so it took as long as the pearl potatoes took to bake which wasn’t very long.
The meat looked like it had already been seared but I examined the package and it seems all it had on it was a little seasoning, I butterflied it anyway so it appeared bigger..
I added cheese to mine because I couldn’t help myself..
and served it with roast veg, baby potatoes and tomatoes.
Not the best of photos but, bloody hell it was nice..
Chicken taco casserole:
I wanted to make something quick than didn’t require much thought for this dish, so I sauteed some onion and chicken pieces in a splash of oil, mixed in some taco seasoning.
put some peppers, half a can of spicy mixed beans and some tomatoes in when the chicken was browned, and covered it with water, simmered it for half an hour, thickened the sauce with thickening granules ~ cheating I know ~
and served it with a handful of cheesy cornchips.
