so I took the opportunity to have pasta, I bought most of the ingredients from Tesco, ready made.. eeeek!!
Then I made some cheese sauce out of a packet (Double eeek!!)
I have a queue of dinners to blog, I’ve decided to catch up with myself in no particular order, so to make a start this is a double post of pasta and pizza.
Both were really simple dishes, quick to make, but delicious nevertheless.
The first was an excuse to use up a bits and pieces in the fridge.
Tortilla pizza:
I have made quite a few pizza dinners in the last couple of years and I think this was the easiest.

Any way, the base for this was a flour tortilla, you can’t get simpler than that.
I put tomato, basil and mozzarella on to flour tortillas
put the salami and chorizo on top of that
and baked them in the oven, I cooked peppers, onions and mushrooms separately so they were crispy
and made a coleslaw to go with them
They were gorgeous and foldable, which means you can stuff the lot in your face at once.
Mr 5 wanted a fishfinger sarnie for his dinner, so I took the opportunity to have pasta, I bought most of the ingredients from Tesco, ready made.. eeeek!!
Ready made pasta:
Into the bottom of a dish I dolloped some Tesco finest tomato and something pasta sauce.
I can’t remember what the something was, probably herbs..
on to that I put cooked Tesco ricotta and spinach tortellini, cubed mozzarella and some fresh tomato
Then I made some cheese sauce out of a packet (Double eeek!!)
drizzled it over the top, added some cheese
and baked it
A bit of a cheat but sometimes that’s ok. It was really good anyway..
I served it with a cheese and onion roll that I added garlic butter and herbs to.
