Even if I say so myself, that was gorgeous, if you left out the partridge and chorizo that would make a very nice vegetarian dish.
Sticking with the Lidl project, I made some sweet chilli kangaroo kebabs and served them with some black eyed bean rice, I’m definitely a big fan of roo meat, it’s really very delicious, I’m hoping it’s not just a Christmas thing and I’ll be able to get it in the new year.
I bought some partridges while I was in there and made a rather yummy roast partridge dinner last week.
Mr 5 left the one of the breasts of his, he has recently had the appetite of a small child, which is a bit worrying, but it did mean I had some meat for the dish I made the following evening, I decided to make a thick soup, I found a square of focaccia in the freezer and decided to use it up along with the remain mozzarella I used on these garlic meatballs.
Mediterranean broth with partridge:
I also had an end piece of chorizo in the fridge which I used on the topping..
I cooked off the onion and some potatoes before adding peppers and mushroom and the remaining partridge
Then I added some frozen peas and beans, a diced tomato and a crumbled veg stock cube
Topped it up with water, stuck in a lump of frozen passata
brought it to the boil
and then simmered it for 10 minutes until it had thicken up a little
in the meantime I cubed the bread and put the cheese on top
and baked it in the oven to melt the cheese.
The soup went into a bowl, the steam fogged the photo up a bit
put the bread on top along with some cherry tomatoes
and then added olives, Parmesan and the cubed chorizo
